Why Your Cakes Turn Out Dry (And How to Fix It)

There’s nothing more disappointing than pulling a cake out of the oven, letting it cool, taking that first bite… and realizing it’s dry. We’ve all been there. The good news? Dry cake is almost always preventable, and, once you know what to look for, it’s an easy fix. Below you’ll find six simple tips that guarantee you get soft, moist, and delicious results every time.

6 Reasons Why Your Cakes Are Turning Out Dry

1. You’re Adding Too Much Flour

Correct amount of flour being weighed out on a scale to avoid dry cakes.

This is one of the most common causes of dry cake. When you add more flour, it absorbs more liquid than the recipe intends which leaves your cake dense and dry instead of soft and tender.

The fix:

  1. Use a kitchen scale for accuracy
  2. If using measuring cups, spoon flour into the cup and level it off (don’t scoop directly)

2. It’s Overbaked

Even a few extra minutes in the oven can dry out your cake. Ovens vary, so relying only on the timer can sometimes lead to overbaking.

The fix:

  1. Start checking your cake a few minutes early
  2. Use the toothpick test (it should come out with a few moist crumbs; it should not be completely dry)
  3. Look for lightly golden edges and a set center

3. Not Enough Fat or Moisture

Various baking ingredients on the counter (eggs, butter, etc.)

Ingredients like butter, oil, eggs, and milk are what give a cake its soft texture. If the balance is off, your cake can turn out dry.

The fix:

  1. Follow ingredient measurements carefully
  2. Don’t substitute or reduce fats unless you know how it will affect the texture
  3. Ingredients like applesauce or sour cream can help boost moisture

4. Ingredients Aren’t at Room Temperature

Fully stocked fridge with a carton of eggs on the third shelf. Cold eggs can be one cause of dry cakes.

Cold ingredients don’t mix as evenly as room temperature ones which can affect the final texture of your cake.

The fix:

Let eggs, butter, and dairy sit out before baking. This helps create a smoother batter and more even bake

5. Overmixing the Batter

Once flour is added, overmixing can develop too much gluten leading to a tougher, drier cake.

The fix:

  1. Mix only until ingredients are fully incorporated
  2. Stop mixing as soon as you no longer see streaks of flour

6. Improper Storage

Even a perfectly baked cake can dry out if it’s not stored correctly.

The fix:

  1. Wrap tightly in plastic wrap or store in an airtight container
  2. Refrigerate only when necessary (and bring back to room temp before serving)
