Ingredients
- Lemon Curd:
2 large egg yolks
1/4 c. granulated sugar
2 tbsp. lemon juice
1 tsp. grated lemon zest
2 tbsp. butter, softened
- Cake:
1 Dutch Apron® Bakery Lemon Crème Cake Roll
1/2 c. sliced almonds
Powdered sugar, for dusting
Directions
- Make the Lemon Curd
- Fill the bottom of a double boiler with a few inches of water and bring to a boil. Reduce the heat to maintain a gentle simmer.
- In the top portion of the double boiler, whisk together the egg yolks, sugar, lemon juice, and lemon zest.
- Place the top of the double boiler over the simmering water and whisk continuously to prevent the eggs from curdling.
- Continue whisking until the mixture becomes smooth and thickened, about 8-10 minutes.
- Remove the mixture from the heat and immediately whisk in the softened butter one tablespoon at a time until fully incorporated.
- Cover the surface of the lemon curd directly with plastic wrap and set aside to cool slightly.
- Make the Cake
- Preheat the oven to 350°F.
- Line an 8×8-inch baking pan with parchment paper or spray with cooking spray.
- Place your Lemon Crème Cake Roll into a stand mixer and mix until it becomes a soft, uniform cake mixture.
- Press the cake mixture evenly into the bottom of the prepared pan.
- Drop spoonfuls of the prepared lemon curd over the cake layer, keeping the curd approximately 1 inch away from the edges of the pan.
- Sprinkle the slices almonds over the top of the lemon curd.
- Bake for 35-40 minutes, or until the cake is golden brown and a toothpick inserts into the cake portion (avoiding the lemon curd) comes out clean.
- Cool and Finish
- Remove the cake from the pan and allow it to cool completely on a wire rack.
- Dust generously with powdered sugar before slicing.
