This Caramel Apple Pumpkin Icebox Cake combines Dutch Apron® Bakery Pumpkin Cake Roll with creamy cheesecake filling, spiced apples, and rich caramel sauce. With layers of pumpkin cake and apple cheesecake flavor in every bite, it’s an easy no-bake dessert that’s perfect for fall gatherings, Thanksgiving, or anytime I’m craving all of my favorite fall flavors in one dessert.
There are a few flavors I look forward to every fall, and pumpkin, apple, and caramel are definitely near the top of my list. So, instead of choosing just one for this recipe, I decided to put all three together. I don’t think you should have to choose between apple and pumpkin anyway!
I also wanted this to be a dessert I could make ahead for Thanksgiving or a fall get-together. Starting with a Dutch Apron® Bakery Pumpkin Cake Roll takes care of the cake layer, and the rest is simply a matter of making the cheesecake filling and layering everything together. Once it’s assembled, the refrigerator does the rest of the work.
The hardest part is waiting until the next day to dig in. Giving the cake plenty of time to chill allows the cheesecake filling to firm up and all those pumpkin, apple, caramel, and cream cheese flavors to come together. Once it’s inverted onto a platter and finished with caramel and toasted pecans, it looks like I spent a lot more time on it than I actually did. Those are my favorite kinds of recipes!

What You’ll Need
- 9 x 5-inch loaf pan
- Stand mixer or electric hand mixer
- Large mixing bowl
- Rubber spatula
- Plastic wrap
- Serving platter
- Sharp knife
- Cutting board
Storage Information
Caramel Apple Pumpkin Icebox Cake should be stored covered in the refrigerator because of the cream cheese and whipped topping in the filling. For the best flavor and texture, I recommend enjoying it within 3 to 4 days and keeping it chilled until you’re ready to slice and serve. This is also a great make-ahead dessert because you can assemble it the night before your gathering and let it set in the refrigerator overnight.
Tips for Making Caramel Apple Pumpkin Icebox Cake
- Don’t skip the chill time. Since the Pumpkin Cake Roll is softer than the cookies or graham crackers traditionally used in some icebox cakes, giving the dessert at least 8 hours to chill helps the cheesecake filling firm up and makes the finished cake easier to slice.
- Flatten the cake gently. After removing the crème filling, carefully flatten the Pumpkin Cake Roll without pressing too hard. I want the cake to stay intact so I can create distinct layers.
- Trim as you go. The pieces of Pumpkin Cake Roll don’t have to fit the loaf pan perfectly. I trim and piece them together as needed to create an even cake layer.
- Add some crunch. The cake and filling are both wonderfully soft and creamy, so I love adding toasted pecans to the top just before serving for a little contrast.

Ingredients
- Cheesecake Filling
8 ounces cream cheese, softened
1 package (3.4 ounces) instant vanilla pudding mix
1 cup milk
½ cup powdered sugar
1½ cups whipped topping or homemade whipped cream
- Cake & Apple Layers
1 Dutch Apron® Bakery Pumpkin Cake Roll
1 can (approximately 20 ounces) apple pie filling
¼ cup caramel sauce, plus additional for garnishing
- Optional Garnishes
Whipped cream
Chopped toasted pecans
Ground cinnamon
Directions
- Prepare the Pumpkin Cake Roll
- Thaw the Dutch Apron® Bakery Pumpkin Cake Roll according to the package directions.
- Carefully unroll the cake roll and remove the cream cheese filling.
- Gently flatten the pumpkin cake. Cut the cake into pieces sized to fit your 9 x 5-inch loaf pan. You’ll want enough cake to create three layers.
- Make the Cheesecake Filling
- Add the softened cream cheese to the bowl of a stand mixer or a large mixing bowl. Beat until smooth and fluffy.
- Add the instant vanilla pudding mix and milk. Mix on low speed until smooth and combined.
- Add the powdered sugar and continue mixing until smooth.
- Using a rubber spatula, gently fold in the whipped topping or whipped cream until evenly incorporated. Set aside.
- Assemble the Icebox Cake
- Line a 9 x 5-inch loaf pan with plastic wrap, leaving plenty of overhang on all sides. You’ll use the extra plastic wrap to cover the cake and help remove it from the pan later.
- Spread approximately one-third of the apple pie filling evenly across the bottom of the pan. Remember, the bottom will become the top when you invert the cake.
- Spread one-third of the cheesecake filling over the apples.
- Add a light drizzle of caramel sauce.
- Place one layer of flattened Pumpkin Cake Roll over the cheesecake mixture, trimming and piecing the cake together as needed to fit the pan.
- Repeat with another layer of apple pie filling, cheesecake filling, caramel sauce, and Pumpkin Cake Roll.
- Repeat the layers once more, finishing with the final layer of Pumpkin Cake Roll. Gently press the cake down to help everything settle together.
- Chill the Cake
- Fold the excess plastic wrap over the top of the cake.
- Refrigerate for at least 8 hours or overnight. This gives the cheesecake filling time to set and helps all of the layers hold together when sliced.
- Serve
- When you’re ready to serve, unfold the plastic wrap from the top of the pan.
- Place a serving platter upside down over the loaf pan. Carefully flip the pan and platter together.
- Gently lift away the loaf pan and remove the plastic wrap.
- Finish the cake with whipped cream and a generous drizzle of caramel sauce.
- If desired, sprinkle toasted pecans over the top and finish with a little ground cinnamon.
- Slice with a sharp knife and serve chilled.
