Ingredients
- Berry Compote:
2 c. mixed berries, fresh or frozen
1/4 c. granulated sugar
1 tbsp. orange juice
1 tbsp. cornstarch
1 tbsp. cold water
- Pumpkin Waffles:
1 Dutch Apron® Bakery Pumpkin Cake Roll, thawed slightly
4 large eggs
1/2 c. milk
1 tsp. ground cinnamon
- Ice Cream Sandwiches:
2 pt. vanilla ice cream
Optional: Extra berry compote for serving
Directions
- Make the Berry Compote
- In a medium saucepan over medium heat, combine the mixed berries, sugar, and orange juice. Bring to a gentle boil.
- Cook for about 5 minutes, mashing the berries against the side of the pan until softened and juicy.
- In a small bowl, whisk together the cornstarch and cold water until smooth.
- Whisk the slurry into the berry mixture. Turn heat to high and boil for about 1 minute, or until thickened.
- Remove from heat and refrigerate until cool.
- Make the Pumpkin Waffles
- Let the Pumpkin Cake Roll thaw at room temperature for about 15 minutes. Once slightly thawed, remove the cake roll from its packaging. Using a sharp knife, slice the cake roll into 8 even slices.
- In a shallow dish, whisk together the eggs, milk, and cinnamon until fully blended.
- Dip each cake slice in the egg mixture, coating completely.
- Pre-heat the waffle iron to medium heat.
- Place each cake roll slice into the waffle iron and cook until golden brown and slightly crisp, about 2-3 minutes.
- Transfer to a wire rack to cool.
- Slice the Ice Cream
- Using a sharp knife, cut a slit down the side of the ice cream container and peel away the packaging.
- Lay the ice cream on its side and slice into 8 rounds, about 1/2-inch thick.
- Assemble the Sandwiches
- Place one pumpkin waffle on a plate.
- Top with an ice cream round and a spoonful of berry compote.
- Place another waffle slice on top and press gently to sandwich the layers together. Serve immediately.
