In the warmer months, a cool and refreshing dessert is always a welcome treat. We’re sharing one of our seasonal favorites with you today: Mini No-Bake Key Lime Pies. Made with a Dutch Apron® Bakery Key Lime Cake Roll, a homemade key lime pie filling, and graham cracker crumbs, these mini pies are bursting with tangy key lime flavor and creamy goodness. Plus, since this is a “no-bake” recipe, they’re perfect for those days when you don’t want to turn on the oven. It’s a great make-ahead dessert that you can easily dish out for all your warm weather gatherings.

What You’ll Need

  • A hand mixer and large mixing bowl to mix the ingredients for your cake layer and your filling.
  • To cut your cake and filling mixture into circles, use a 2 1/2-inch-wide cookie cutter.
  • Silicone muffin liners are what you’ll use to shape your pies. The paper liners work just as well. We prefer the silicone ones as it makes unmolding the pies much easier.

Storage Information

Since this is a frozen dessert, they must remain frozen. If you make them ahead of time, do not unmold them or decorate them until you are ready to serve. The silicone mold can be wrapped tightly in plastic wrap and stored in the freezer. They can be stored this way for 3 months.

If you have already taken them out of the molds and decorated them, store them in a large freezer container in a single layer. Do not stack them. They’ll typically be good for a few weeks after they’ve been made if stored properly.

Tips for Making Mini No-Bake Key Lime Pies

  • If you can’t find fresh key limes, you can use regular limes. Just make sure they are fresh to ensure you get the most flavor out of them. You can also use bottled key lime juice as a substitution, though you may have to play with the amounts you add to ensure you get the right flavor.

How to Make a Refreshing Batch of Mini No-Bake Key Lime Pies

Servings: This recipe makes approximately 12 Mini No-Bake Key Lime Pies.

Ingredients
  • 1 Dutch Apron® Bakery Key Lime Cake Roll
  • 1 1/2 c. graham cracker crumbs (or 1 sleeve of graham crackers)
  • 4 oz. butter, melted
  • 8 oz. cream cheese, softened
  • 14 oz. sweetened condensed milk
  • 3/4 c. fresh squeezed key lime juice
  • 8 oz. whipped topping + extra for garnish
Instructions
Prepare the Graham Cracker Crumbs and Cake
  1. Take the Key Lime Cake Roll out of the packaging and let it sit on the counter to thaw for 30 minutes.
  2. While it is thawing, mix the graham cracker crumbs with the melted butter until well combined. Set aside.
  3. Once the cake roll is thawed, break off or cut up pieces of the cake roll and place them in a large mixing bowl. Then, using a mixer on medium speed, beat until thoroughly mixed. You can also mix the cake and filling together by hand if you prefer.
  4. Roll the cake mixture out until it is about 1/4-inch thick. Then, use the cookie cutter to cut out 12 circles. Set those aside.
Prepare the Filling
  1. In a large mixing bowl, cream the softened cream cheese using an electric hand mixer.
  2. Add the sweetened condensed milk and mix until smooth.
  3. Pour in the key lime juice and mix.
  4. Gently fold in 8 oz. of whipped topping until no streaks remain and everything is well combined.
Assemble and Chill
  1. Take the individual silicone cups or paper cupcake liners and fill them with the key lime pie filling. Only fill them about 3/4 full.
  2. Place a cake circle on top of the filling in each cup. Then, sprinkle the prepared graham cracker crumbs over the cake layer.
  3. Place the filled cups on a sheet tray and transfer to the freezer. Freezer for at least 4 hours or until the pies are set.
Serve Your Mini No-Bake Key Lime Pies
  1. Carefully unmold the pies by submerging the bottom half of the silicone mold in warm water for a few seconds.
  2. Serve with additional whipped topping and a key lime slice on top if desired.
