What You’ll Need

  • A large mixing bowl for the pudding mixture.
  • An electric hand mixer for combining the ingredients for the pudding mixture. You can do it by hand with a whisk if you don’t have an electric mixer. However, you want to be sure you mix it very well to remove any lumps.
  • A trifle bowl or any clear container, like a punch bowl, mixing bowl, or even serving glasses if you want to go with individually portioned trifles.

Storage Information

A trifle can typically be made one day in advance. If you’d like to give yourself a little more time, you can prepare the different parts of your trifle (cake roll, pudding mixture, and toppings) and store them in separate, airtight containers in the refrigerator for up to three days. Then, the day before you plan to serve your Lemon Blueberry Trifle, take out all the prepared ingredients and layer.

Tips for Making the Perfect Trifle

  • Prepare all the separate components of the trifle before assembling.
  • Check the capacity of your dish before buying and preparing the ingredients. Larger trifle bowls or containers will possibly need more ingredients to fill them properly.
  • If you’re prepping your trifle ahead of time, wait to put on any toppings until you are ready to serve. This helps to ensure they stay fresh for your guests!

How to Make a Refreshing Lemon Blueberry Trifle

Ingredients
  • 1 Dutch Apron® Bakery Lemon Crème Cake Roll
  • 8 oz. cream cheese, softened
  • 2 (3.4 oz.) boxes lemon pudding mix (dry mix only, do not prepare)
  • 8 oz. whipped topping, thawed
  • 3 c. milk, brought to room temperature
  • 4 c. fresh blueberries
  • 1 lemon, sliced for garnish
Instructions
  1. While still frozen, cut the Lemon Crème Cake Roll into one-inch pieces. Put them to the side.
  2. In a large mixing bowl, mix together the cream cheese and dry pudding mixes until smooth. Slowly add the room temperature milk until it has been fully incorporated into your mixture. Fold in 2 cups of whipped topping.
  3. In the trifle bowl, layer 1/3 of the cake pieces on the bottom.
  4. Next, layer 1/3 of the pudding mixture on top of the cake pieces. Smooth it around evenly with a spoon.
  5. Then, sprinkle on 1/3 of the fresh blueberries.
  6. Repeat steps 3-5 two more times.
  7. Garnish with the remaining whipped topping, lemon slices, and any extra blueberries.
  8. Cover and chill until ready to serve.

There’s no doubt that this Lemon Blueberry Trifle is perfect for spring: it’s beautiful, flavorful, and easy to share! It’s also very versatile.
