  • Stand mixer or large mixing bowl and hand mixer: to make your mint layer

How to Make a Minty-Fresh Batch of Mini Grasshopper Pies

Servings: This recipe makes approx. 10 refreshing, creamy Mini Grasshopper Pies.

Ingredients

Pies:

Mint Layer:

  • 8 oz. cream cheese, softened
  • 1 c. powdered sugar
  • 1 tsp. mint extract
  • Green gel food coloring, optional
  • 1 1/2 c. whipped topping

Chocolate Layer:

  • 1 pkg. instant chocolate pudding mix
  • 1 1/2 c. whole milk

Instructions
Create the Crust
  1. Take the Chocolate Crème Cake Roll out of the packaging and let it sit on the counter to thaw for 30 minutes.
  2. Once the cake roll is thawed, break off or cut up pieces of the cake roll and place them in a food processor or mixer. Process until thoroughly combined.
  3. Press the crushed cake into the bottom of a cupcake tin to form the crust of your Mini Grasshopper Pies.
  4. Freeze for 30-60 minutes, or until firm enough to hold their shape when removed. Carefully remove crusts from the tins and set aside.
Prepare the Chocolate Layer
  1. Whisk together the instant chocolate pudding mix and whole milk in a medium-sized bowl until the mixture thickens.
  2. Spoon approximately 1 tbsp. of the chocolate pudding mixture onto each crust.
Prepare the Mint Layer
  1. In a large mixing bowl, beat the softened cream cheese until smooth.
  2. Add powdered sugar, mint extract, and green gel food coloring. Mix until well combined.
  3. Gently fold in the whipped topping until the mixture is light and fluffy.
  4. Spoon approximately 2 tablespoons of the mint layer over the chocolate pudding layer on each Mini Grasshopper Pie.
Add Toppings and Chill
  1. Garnish with chocolate shavings, mint, chocolate sprinkles, or a fudge drizzle for an elegant finishing touch.
  2. Refrigerate for at least 4 hours or until fully set.
  3. Serve chilled and enjoy!
