What You’ll Need
- We recommend using a stand mixer and bowl to make the buttercream frosting. This will help make sure your ingredients are well combined, so you don’t have any large chunks in your frosting. Alternatively, you can use a large mixing bowl and a hand mixer.
- Grab a cake board to place your cake roll on while decorating.
- A turntable is a great tool to have. It allows you to spin the cake around smoothly, so you get a professional, consistent finish on the frosting.
- Consider using piping bags to apply the buttercream to your cake roll as this will give you more control over the amount of buttercream applied. For the swirls on top of your cake roll, you’ll want to use a large star tip in your piping bags.
- A cake scraper will be used alongside the turntable to frost your cake and evenly distribute your buttercream.
- If you decide to add gold flecks to your cake roll, you’ll want a food-grade paint brush.
Storage Information
A frosted cake can last up to a week when stored in the refrigerator. The frosting helps to lock in the moisture of the cake, keeping it fresh while you wait to serve. If you cut the cake first and then want to store it, put the pieces in an airtight container or cover the cut sections with any leftover frosting you may have. The cake can be stored like this for a week in the refrigerator.
Tips for Making a New Year’s Eve Party Cake Roll
- Don’t take your cake roll out of the freezer until you are ready to start putting on the frosting. A cold cake is easier to decorate as it is less delicate. A room temperature cake is tender and fragile which means it is more likely to fall or break apart.
- You can make this buttercream the day before you assemble your cake roll and refrigerate it overnight. Then, when you’re ready to start decorating your cake, take it out and let it come back up to room temperature. You may need to mix again for a few minutes before applying.
- Gel food coloring works the best for this buttercream recipe. A standard food coloring would make the frosting too loose, and it wouldn’t hold its shape.
How to Create a New Year’s Eve Party Cake Roll
Servings: This party-ready cake roll will serve approx. 8 people at your New Year’s Eve celebrations.
Ingredients
Cake Roll:
- 1 Dutch Apron® Bakery Red Velvet Cake Roll
- Black, gold, silver, and white sprinkles
- Gold food coloring
- Lemon extract
Buttercream Frosting:
- 2 c. unsalted butter, room temperature
- 1 tbsp. vanilla extract
- 1 tsp. salt
- 7 c. powdered sugar, sifted
- 2 tbsp. heavy cream
- Black gel food coloring
Instructions
Prepare the Black Buttercream Frosting
- In your stand mixer, beat the butter on medium speed until smooth and light, about 2 minutes.
- Reduce the mixer speed to low and slowly incorporate the powdered sugar. Mix until fully combined.
- Add heavy cream, vanilla extract, and salt. Continue mixing until smooth and fluffy, about 1-2 minutes.
- Add black gel food coloring to the frosting and mix thoroughly.
- Tip: Refrigerate the frosting to deepen the black color before using.
Frost the Cake Roll
- Remove the Red Velvet Cake Roll from its packaging. Place a small amount of buttercream on your cake board and place the cake roll on it vertically, so it is standing on one end.
- Carefully move the cake and cake board to your turntable.
- Fill a piping bag with black buttercream. Starting at the bottom of the cake roll, pipe a ring of frosting all the way around.
- Continuing piping rings above each other until the entire cake is covered. Fill the top of the roll with frosting as well.
- Using a bench scraper, smooth the frosting around the sides of the cake while spinning the turntable. Wipe off excess frosting from the bench scraper after every pass.
- Fit a piping bag with a large star tip and pipe swirls of black buttercream frosting around the top of the cake.
Add the Finishing Touches
- Add sprinkles in black, gold, silver, and white to the top and sides of the cake roll for a glamorous touch.
- Tip: Place your turntable on top of a cookie sheet. This will help keep your counters clean when you add the sprinkles.
- Create gold specs by mixing gold food coloring with lemon extract. Dip a small brush into the mixture and gently flick it onto the sides of the cake roll.
The New Year’s Eve Party Cake Roll is more than just a dessert – it is a statement piece.
