That’s why these Sparkling Mini Parfaits have become one of my go-to NYE desserts. They look fancy, but they’re actually incredibly simple which, honestly, is the sweet spot I aim for this time of year.
What I love most about them is how effortlessly they fit the vibe of New Year’s Eve. You get layers of chocolate, pudding, fruit, and sparkle all in a neat little glass you can eat while chatting, dancing, or pretending you’re totally fine staying up past midnight. Ingredients
1 Dutch Apron® Bakery Chocolate Crème Cake Roll
2 pkg. vanilla pudding or custard
1 c. (8 oz.) heavy cream
2, 4 oz. semisweet chocolate bars, finely chopped
Raspberries or other preferred fruits
Silver dragees
Whipped cream
Gold pearlized sugar sprinkles
Directions
- Make the Ganache Filling
- Place the chopped chocolate into a medium-sized, heat-proof bowl.
- Heat the cream in a small saucepan over medium heat until it begins to gently simmer. Do not let it come to a rapid boil!
- Pour the cream over the chocolate. Let it for 2-3 minutes to allow the chocolate to soften.
- Stir very slowly until completely combined and all the chocolate has melted. The finer you chop the chocolate, the quicker it will melt with the cream.
- Let sit at room temperature to cool and thicken. You can place it in the refrigerator but make sure you stir it a few times to ensure it remains even and smooth.
- Once cool, place the ganache in a piping bag with a plain tip.
- Prepare the Other Layers
- Prepare the vanilla pudding or custard according to the directions on the packaging. Once it is ready, spoon into a piping bag with a plain tip.
- Remove the Chocolate Crème Cake Roll from your refrigerator and take it out of the package. Slice into 1-inch chunks.
- Assemble the Parfaits
- Start by piping the pudding into the bottom of your parfait glasses.
- Next, layer 3-4 pieces of the cake roll chunks.
- Then, pipe on a layer of chocolate ganache.
- Sprinkle on the silver dragees and raspberries/fruit.
- Repeat the layers as necessary to fill up your glasses.
- Garnish with whipped cream and gold pearlized sugar sprinkles.
