What You’ll Need

  • To make your strawberry syrup, you’ll need a potato masher or fork, a medium-sized saucepan, and a fine-mesh strainer.
  • A stand mixer, whisk attachment, paddle attachment, and bowl will be used to make the mascarpone filling. These items will help you make sure your ingredients are well combined and that your filling achieves the desired consistency and texture.
  • An 8-inch square dish is what you’ll use to layer your ingredients and make your Strawberry Tiramisu.

Storage Information

Transfer any leftovers to an airtight container or wrap the dish well in plastic wrap. Store in the refrigerator for up to four days. When you’re ready to eat a piece, just take it out, unwrap it, place it on a plate, and dust with additional powdered sugar.

If you’re making your Strawberry Tiramisu ahead of time, wait to put on the fresh strawberries and powdered sugar until just before you serve.

Tips for Making a Strawberry Tiramisu

  • When making a mascarpone filling, always use chilled mascarpone cheese straight from the refrigerator.
  • If you’re layering your tiramisu in a different dish than you’d like to serve it in, line your dish with plastic wrap or parchment paper that sticks out of the sides of the dish. When you’re ready to transfer the tiramisu (after it has chilled), you can grab the ends of the parchment paper, lift up, and transfer to your serving dish/tray.
  • There is a narrow window for dipping your cake slices in the strawberry syrup. You want to dip them long enough that the cake soaks up the flavor but not so long that the cake begins to break apart. The optimal time is just a few seconds on each side. Also, make sure the syrup is cool before you begin dipping your cake. This will prevent the cake slices from breaking apart further.

How to Make a Strawberry Tiramisu

Servings: This recipe will make approximately 9 servings of Strawberry Tiramisu.

Ingredients

Strawberry Syrup:

  • 2 lb. fresh strawberries, sliced
  • 1 c. water
  • 1 1/2 c. granulated sugar
  • 2 tbsp. lemon juice

Mascarpone Filling:

  • 1 1/2 c. heavy cream
  • 16 oz. mascarpone cheese
  • 3/4 c. granulated sugar
  • 3/4 c. strawberry syrup (ingredients listed above)
  • 1 tsp. vanilla extract

Tiramisu:

Instructions
Make the Strawberry Syrup
  1. Place the sliced strawberries and water in a medium-sized saucepan over medium-high heat.
  2. Crush the berries using a potato masher or fork. Bring to a boil. Then, reduce the heat to medium-low and simmer for about 5 minutes.
  3. Remove from heat and strain the mixture through a fine-mesh strainer into a liquid measuring cup or bowl. Discard solids.
  4. Return the strained strawberry juice to the saucepan. Then, add the granulated sugar and lemon juice. Bring to a boil and simmer for about 5 minutes until slightly thickened. Chill in refrigerator until completely cool.
Make the Mascarpone Filling
  1. In a stand mixer that’s fitted with the whisk attachment, whip the heavy cream until stiff peaks form. Transfer to a separate bowl. Replace whisk attachment with paddle attachment.
  2. In the stand mixer bowl, beat the mascarpone cheese, granulated sugar, vanilla extract, and 3/4 c. of the strawberry syrup you made earlier. Beat until combined.
  3. Gently fold the mascarpone mixture into the whipped cream until fully incorporated.
Assembly the Strawberry Tiramisu
  1. Allow the cake rolls to thaw for about 30 minutes. Then, unroll and remove the filling. Slice each cake roll into rectangles about 1 1/2 inches wide. Slice each of those rectangles down the center.
  2. Dip the cake slices in the remaining strawberry syrup until soaked but not soggy. Next, arrange half of the cake slices in an even layer along the bottom of an 8-inch square dish.
  3. Spread half of the mascarpone filling over the cake slices. Repeat with another layer of soaked cake slices and the remaining filling.
  4. Cover with plastic wrap and refrigerate for at least 6 hours or overnight.
  5. Just before serving, dust the top with powdered sugar and garnish with fresh strawberries.
  6. Cut into squares, serve, and enjoy!
