What is a Fault Line Cake?

Fault line cakes have been at the top of the cake decorating trend charts for the last few years. And it’s pretty easy to see why. The results are jaw-droppingly stunning and so unique. Similar to a geode cake, a fault line cake is made with lines of buttercream that are applied in different amounts to leave a “crack” or “gap” in the middle of the cake’s outer frosting layer. This gives guests a peek at the colorful or textured inside which often features delicious additions such as sprinkles, flowers, or fruits.

What You’ll Need

  • We recommend using a stand mixer and bowl to make the buttercream frosting. This will help make sure your ingredients are well combined, so you don’t have any large chunks in your frosting. Alternatively, you can use a large mixing bowl and a hand mixer.
  • Grab a cake board to place your cake roll on while decorating.
  • turntable is a great tool to have. It allows you to spin the cake around smoothly, so you get a professional, consistent finish on the frosting.
  • Consider using piping bags to apply the buttercream to your cake roll as this will give you more control over the amount of buttercream applied. For the swirls on top of your cake roll, you’ll want to use a large star tip in your piping bags.
  • cake scraper will be used alongside the turntable to frost your cake and evenly distribute your buttercream.
  • If you decide to use the edible gold paint to trace the edges of your fault line, you’ll want a food-grade paint brush.

Storage Information

A frosted cake can last up to a week when stored in the refrigerator. The frosting helps to lock in the moisture of the cake, keeping it fresh while you wait to serve. If you cut the cake first and then want to store it, put the pieces in an airtight container or cover the cut sections with any leftover frosting you may have. The cake can be stored like this for a week in the refrigerator.

Tips for Making a Candy Corn Fault Line Cake Roll

  • You can make this buttercream the day before you assemble your cake roll and refrigerate it overnight. Then, when you’re ready to start decorating your cake, take it out and let it come back up to room temperature. You may need to mix again for a few minutes before applying.
  • Gel food coloring works best for this buttercream recipe. A standard food coloring would make the frosting too loose, and it wouldn’t hold its shape.
  • Don’t take your cake roll out of the freezer until you are ready to start putting on the frosting. A cold cake is easier to decorate as it is less delicate. A room temperature cake is tender and fragile which means it is more likely to fall apart.

How to Create a Candy Corn Fault Line Cake Roll

Servings: The Candy Cane Fault Line Cake Roll will serve approx. 8 people, making it the perfect dessert for smaller gatherings or parties with a large array of sweet treats.

Ingredients
  • 1 Dutch Apron® Bakery Carrot Cake Cake Roll
  • Orange sugar sprinkles
  • Edible gold paint
  • Buttercream frosting
    • 2 c. unsalted butter, room temperature
    • 1 tbsp. vanilla extract
    • 1 tsp. salt
    • 7 c. powdered sugar, sifted
    • 2 tbsp. heavy cream
    • Orange and yellow gel food coloring
Instructions
Make the Buttercream Frosting
  1. In a large mixing bowl, beat the unsalted butter until smooth and creamy.
  2. Mix in the vanilla extract and salt until fully incorporated.
  3. Gradually, add the powdered sugar one cup at a time. Beat well after each addition. Scrape down the sides of the bowl as needed.
  4. Pour in the heavy cream and continue beating until the frosting is light and fluffy.
Color the Buttercream
  1. Separate the buttercream into three bowls.
  2. Add orange food coloring to one bowl and yellow to another. Leave the last one white. Stir well to ensure even coloring.
  3. Place each color of buttercream in its own piping bag for easy application.
Assemble the Cake
  1. Take your Carrot Cake Cake Roll out of the packaging. Place a small amount of buttercream on your cake board and place the cake roll on it vertically, so it is standing on one end.
  2. Carefully, move the cake and cake board to your turntable.
    • Tip: Have your turntable on top of a cookie sheet. This will help keep your counters clean when you add the sprinkles.
  3. Apply a thin layer of buttercream to the entire cake roll. This will be your crumb coat.
  4. Next, pipe the orange buttercream onto the center section of the cake. Using a cake scraper, smooth the frosting evenly around the cake.
  5. Gently add sprinkles to the layer of orange frosting all around the cake. Be careful when pressing the sprinkles into the frosting as you don’t want to dent your cake.
  6. Pipe the yellow buttercream on the bottom third of the cake and white on the top third. Make sure these layers of buttercream are thicker than the layer with the sprinkles. Then, smooth each section with a cake scraper to create clean lines.
  7. Place the cake in the freezer for 15-20 minutes to set the buttercream.
Add the Final Decorations
  1. Use edible gold paint to trace the fault line where the orange and white sections meet, as well as where the orange and yellow sections meet. This adds an elegant, shimmering effect to your cake.
  2. Pipe alternating swirls of orange, yellow, and white frosting on top of the cake roll. Add more sprinkles for a little extra flair.
