What You’ll Need

  • hand mixer and large mixing bowl to combine the cake and crème filling. Alternatively, you can mix the cake and filling together by hand.
  • To make the buttercream frosting, we recommend using a stand mixer and bowl. This will help make sure your ingredients are well combined, so you don’t have any large chunks in your frosting. Alternatively, you can use the hand mixer you used to mix the cake and filling.
  • Plastic wrap, piping bags, and large star tip will be used for the frosting and decoration.

Storage Information

To keep your Ice Cream Cone Cakes fresh, you’ll want to store them in an airtight container at room temperature. You can keep them looking their best by putting them on an ice cream cone holder before placing them in the airtight container. They can be stored like this for 2-3 days.

If your home is on the warmer side, we do recommend putting them in the refrigerator to avoid the buttercream melting.

Tips for Making Ice Cream Cone Cakes

  • Gel food coloring works best for this buttercream recipe. A standard food coloring would make the frosting too loose, and it wouldn’t hold its shape.
  • When it comes time to add the food coloring to your buttercream, only add a little color at a time until you reach the desired shade. Trust us, when it comes to food coloring, a little goes a long way.
  • When piping your lines of buttercream, try to make your lines as close to the same length as possible. Otherwise, when you start piping, some of your colors may not come through.

How to Scoop Up a Serving of Ice Cream Cone Cakes

Ingredients
  • 1 Dutch Apron® Bakery Strawberry Cheesecake Cake Roll
  • 12 ice cream cones
  • Sprinkles
  • White chocolate melts
  • Buttercream frosting
    • 2 c. unsalted butter, room temperature
    • 1 tbsp. vanilla extract
    • 1 tsp. salt
    • 7 c. powdered sugar, sifted
    • 2 tbsp. heavy cream
    • Gel food coloring: pink, orange, yellow, green, blue, and purple
Instructions
Prepare the Cake Cones
  1. Take the Strawberry Cheesecake Cake Roll out of the packaging and let it sit on the counter to thaw for 30 minutes.
  2. Once thawed, break off or cut up pieces of cake roll and place them into a large mixing bowl. Then, using a mixer on medium speed, beat until thoroughly mixed. You can also mix the cake and filling together by hand if you prefer.
  3. Load up 12 ice cream cones with the crumbled cake until it is filled all the way to the top. Make sure to pack the cake into the cone tightly.
Dip the Cones
  1. Place the white chocolate melts in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each interval until they are fully melted.
  2. Dip the top of each cone into the melted chocolate, fully covering the cake and letting it drip down the sides slightly to create a “melted” effect.
  3. Immediately after dipping your cones in the chocolate, add sprinkles onto the chocolate that is dripping down the sides of your cone. Press in slightly to ensure they stick.
  4. Let the chocolate set completely.
Make the Buttercream Frosting
  1. In your stand mixer, beat the butter until smooth and light in color, about two minutes.
  2. Turn the mixer on low and slowly add your powdered sugar. Once it has been completely incorporated, add in the cream, salt, and vanilla extract.
  3. Once combined, stop the mixer and scrape down the sides of the bowl. Mix an additional 1-2 minutes.
  4. Separate the buttercream you made into 6 bowls.
  5. Color each bowl of frosting with a different gel food coloring. Mix the food coloring into the buttercream until you achieve your desired shade of color.
Decorate Your Ice Cream Cone Cakes
  1. Place each color of frosting into its own piping bag and snip 1/2” opening in the end of each bag.
    • Tip: If you don’t have piping bags, you can use gallon-sized resealable food storage bags with a hole snipped in the corner.
  2. Lay out a piece of plastic wrap on your counter. Pipe a long line of one color of buttercream on the plastic wrap. Leave a margin of a few inches from the sides and bottom of the wrap.
  3. Next, pipe a long line of another color of buttercream right next to the previous one. Continue to pipe the colors in a row on the plastic wrap.
  4. Now, fold the plastic wrap over lengthwise and roll into a cylinder. Grasp the ends of the plastic wrap in each hand and twirl it quickly so the frosting is burrito shaped and the ends of the plastic are tightly twisted.
  5. Fit another piping bag with a large star tip. Snip off one of the plastic wrap tails/ends and insert the frosting cylinder into the piping bag, snipped side down. Then, snip the end off of your piping bag to allow the tip to come through.
  6. Pipe the frosting onto the top of each dipped cone, creating a swirl that resembles the top of an ice cream cone.
  7. Finish by adding more sprinkles on top of your buttercream swirls.
