Truth time: I’m a sucker for anything that tastes like cheesecake. But when you throw fresh strawberries into the mix and call it a salad? I’m absolutely on board. This Strawberry Cheesecake Salad has quickly become one of my favorite make-and-take desserts for picnics, potlucks, and the “can you whip something up for us pretty please?” requests from my kids’ schools. It’s creamy, fruity, and just indulgent enough to feel like a treat without being too heavy.
Plus, it uses chunks of Dutch Apron® Bakery’s Strawberry Cheesecake Cake Roll which all three of the kids love. And, with three kids, finding a dessert that everyone agrees on is nothing short of a miracle. How to Make a Strawberry Cheesecake Salad
Servings: 12 servings
Ingredients
- 2, 8 oz. packages of cream cheese, softened
- 1 c. powdered sugar
- 2 tsp. vanilla extract
- 2, 8 oz. containers frozen whipped topping, thawed
- ½ c. strawberry preserves
- 2 ½ lbs. (about 8 cups) fresh strawberries, hulled and sliced
- 8 graham crackers
- 1 Dutch Apron® Bakery Strawberry Cheesecake Cake Roll, cubed
Instructions
- In a large bowl or stand mixer fitted with a paddle attachment, beat the softened cream cheese on medium speed until whipped and creamy, about 1 minute.
- Gradually, add powdered sugar and vanilla extract. Continue beating until smooth and fluffy, about 1 minute.
- Gently fold in the thawed whipped topping, strawberry preserves, and 6 c. sliced strawberries. This creates that light, creamy cheesecake texture we all love.
- Fold in the cubed Strawberry Cheesecake Cake Roll pieces. Stir gently to combine.
- Transfer the mixture into a serving bowl.
- Top with crushed graham crackers and garnish with remaining sliced strawberries.
